Quality enhancement of large yellow croaker (Pseudosciaena crocea) during frozen (-18 ºC) storage by spiral freezing

This paper investigated the effect of freezing methods on moisture distribution, freshness, protein properties, and microstructure large yellow croaker (Pseudosciaena crocea) during frozen (?18°C) storage. The include, refrigerator (RF), plate (PF), spiral (SF), immersion (IF), liquid nitrogen (NF). results showed that RF took longest time, 587.3 min, rate PF, SF, IF NF was more than ten times RF. In general, IF, have better-related quality characteristics 90 days storage, with a small change in compared to day 5, but for water performed poorly. For protein-related characteristics, somewhat destroyed fiber muscle structure myofibrillar protein. conclusion, SF worthy method maintain fish freezing.
